Delicious and fluffy almond flour pancakes, perfect for breakfast or brunch.
Ingredients

- 1 ¾ cups almond flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup almond milk (or any other milk)
- 3 large eggs
- 1 tablespoon maple syrup
- 2 teaspoons vanilla extract
Instructions
- In a large bowl, whisk together the almond flour, baking powder, and salt.
- In another bowl, whisk together the almond milk, eggs, maple syrup, and vanilla extract.
- Pour the milk mixture into the dry mixture and whisk until smooth.
- Heat a nonstick pan over medium-low heat and grease lightly with some butter or oil. When the pan is hot, scoop ¼ cup of batter into the pan. Cook until the edges start to set and the surface looks slightly dry, about 2 minutes.
- Flip and cook for another 1-2 minutes until cooked through.
- Serve with your favorite pancake toppings.

- These pancakes can be topped with fruits, honey, or yogurt for added flavor.
