Ingredients

  • 4½ cups mini marshmallows
  • 4 tablespoons butter
  • ½ teaspoon vanilla extract

  • 1 small box instant banana pudding mix
  • 1 cup cold whole milk
  • ½ cup whipped topping
  • 12 ripe bananas, sliced

Instructions

  1. Prepare the Pan: Line a 9×9-inch pan with parchment paper, leaving overhang on two sides for easy lifting later. Set aside.
  2. Melt the Marshmallow Base: In a large saucepan over very low heat, melt the butter. Add the mini marshmallows and stir constantly until just melted and glossy. Remove from heat immediately, then stir in vanilla extract and salt.
  3. Add the Cereal: Gently fold the Rice Krispies cereal into the marshmallow mixture until evenly coated. Avoid overmixing to keep the texture light and airy.
  4. Set the Cereal Layer: Transfer the mixture to the prepared pan. Press very lightly with a spatula to level the surface without compacting. Refrigerate for 10–15 minutes until set but still springy.
  5. Make and Spread the Pudding Layer: In a bowl, whisk the banana pudding mix with cold milk until thick. Fold in the whipped topping until smooth. Spread the pudding evenly over the chilled cereal layer.
  6. Chill, Slice, and Finish: Refrigerate for 30–45 minutes until fully set. Lift out, slice into bars, and top each piece with fresh banana slices just before serving.
