Description

A delicious one-pan cheesy beef and rice dish that’s easy to make and perfect for dinner!

Ingredients

Scale
  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 3 cups low-sodium beef broth
  • 3 tablespoons butter, divided
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Melt 1 tablespoon of butter in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened.
  2. Add the ground beef to the skillet. Cook while breaking it apart until fully browned. Drain excess grease if needed.
  3. Stir in the minced garlic and cook for about 1 minute, just until fragrant.
  4. Add the uncooked rice, beef broth, Italian seasoning, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 18–20 minutes, until the rice is tender and the liquid is absorbed.
  6. In a small saucepan over low heat, melt the remaining 2 tablespoons of butter. Stir in the milk, cheddar, and Parmesan, mixing continuously until smooth and creamy.
  7. Pour the cheese sauce into the skillet with the beef and rice. Stir until evenly combined.
  8. Cook uncovered for 2–3 minutes to allow flavors to come together. Garnish with fresh parsley if desired and serve warm.
