Description

Delicious chocolate cream filled cookies made with a yellow cake mix and an instant vanilla pudding filling.


Ingredients

  • ½ cup sour cream
  • ⅓ cup vegetable oil
  • 3 large eggs
  • 1 box instant vanilla pudding mix
  • 1 cup whole milk
  • 2 teaspoons vanilla bean paste or extract
  • 1 pinch kosher salt
  • ⅓ cup cold heavy whipping cream
  • 2 tablespoons powdered sugar
  • 6 ounces bittersweet chocolate, chopped
  • ¾ cup heavy whipping cream

Instructions

  1. Make the Cookies: Preheat oven to 350°F and line baking sheets with parchment paper. Mix cake mix, sour cream, oil, and eggs until smooth. Scoop dough and bake for 10 minutes until set. Cool completely.
  2. Prepare the Filling: Whisk pudding mix, milk, vanilla, and salt until thick. Whip cream with powdered sugar to firm peaks. Fold whipped cream into pudding and transfer to piping bag.
  3. Make the Ganache: Heat cream until steaming and pour over chocolate. Let stand, then whisk until smooth and glossy.
  4. Assemble: Pipe filling onto half the cookies. Top with remaining cookies and spoon ganache over the tops. Let set before serving.
