Delicious chocolate cream filled cookies made with a yellow cake mix and an instant vanilla pudding filling.

- 1 box yellow cake mix
- ½ cup sour cream
- ⅓ cup vegetable oil
- 3 large eggs
- 1 box instant vanilla pudding mix
- 1 cup whole milk
- 2 teaspoons vanilla bean paste or extract
- 1 pinch kosher salt
- ⅓ cup cold heavy whipping cream
- 2 tablespoons powdered sugar
- 6 ounces bittersweet chocolate, chopped
- ¾ cup heavy whipping cream
Instructions
- Make the Cookies: Preheat oven to 350°F and line baking sheets with parchment paper. Mix cake mix, sour cream, oil, and eggs until smooth. Scoop dough and bake for 10 minutes until set. Cool completely.
- Prepare the Filling: Whisk pudding mix, milk, vanilla, and salt until thick. Whip cream with powdered sugar to firm peaks. Fold whipped cream into pudding and transfer to piping bag.
- Make the Ganache: Heat cream until steaming and pour over chocolate. Let stand, then whisk until smooth and glossy.
- Assemble: Pipe filling onto half the cookies. Top with remaining cookies and spoon ganache over the tops. Let set before serving.
Notes
- Make sure to cool the cookies completely before filling to prevent the filling from melting.
- Store cookies in an airtight container in the refrigerator for up to 3 days.
