- 1 to 1 and 1/2 cups powdered sugar

Instructions
- Cream together the softened unsalted butter with granulated and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, and baking soda. Gradually add this dry mixture to the wet ingredients and stir until just combined. Fold in semi-sweet chocolate chips if using.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up, helping to prevent spreading during baking and improve texture.
- Preheat the oven to 350°F (175°C). Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing evenly. Bake for 10-12 minutes until edges are set but centers remain soft. Cool cookies completely on a wire rack before assembling.
- Beat together softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and fluffy. Adjust sweetness to taste.
- Spread a generous amount of filling onto the flat side of one cookie, then top with another cookie to form a sandwich. Gently press together and repeat with remaining cookies.
