Description

A delicious creamy pasta dish with shrimp and Boursin cheese, perfect for a quick weeknight dinner.


Ingredients

  • 8 oz penne or rotini pasta
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound medium shrimp, peeled and deveined
  • 4 oz Boursin cheese (Garlic & Fine Herbs)
  • ¼ cup heavy cream (optional)
  • ¼ cup reserved pasta water
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the Pasta • Bring a large pot of salted water to a boil. • Cook pasta until al dente. • Reserve ¼ cup pasta water, then drain.
  2. Sauté the Shrimp • Heat olive oil and butter in a wide skillet over medium heat. • Add shrimp in a single layer and cook 1–2 minutes per side until just opaque. • Transfer shrimp to a plate and set aside.
  3. Build the Garlic Base • Lower the heat slightly. • Add minced garlic to the same skillet and cook for about 30 seconds, just until fragrant.
  4. Make the Creamy Boursin Sauce • Add Boursin cheese and reserved pasta water to the skillet. • Stir gently until the cheese melts into a smooth sauce. • Add heavy cream if using and stir until combined.
  5. Toss with Pasta • Add cooked pasta directly to the skillet. • Toss gently until the pasta is evenly coated in the sauce.
  6. Finish and Serve • Return shrimp to the skillet and warm through for 1 minute. • Season with salt and pepper to taste. • Garnish with fresh parsley and serve warm.

  • This dish is best served fresh but can be stored in the refrigerator for up to 2 days.
