- 4 pieces boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 3 cloves fresh minced garlic
- 1/2 cup freshly grated Parmesan cheese
- 2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Start by seasoning your chicken breasts with salt, pepper, and Italian seasoning.
- In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, until they’re golden brown and cooked through. Remove them from the skillet and set aside.
- In the same skillet, lower the heat to medium and add a little more oil if needed. Toss in the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it!
- Stir in the rice and toast it for a minute, then pour in the chicken broth. Bring to a gentle boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
- Once the rice is ready, return the chicken to the skillet. Stir in the heavy cream and Parmesan cheese, mixing well to combine everything. Let it simmer for another 3-5 minutes until the sauce thickens.
- Garnish with fresh parsley if desired and serve hot.

- This dish can be served with a side of vegetables for a complete meal.
