Ingredients

- 4 medium Russet potatoes, peeled and sliced
- 1 cup sharp cheddar cheese, shredded
- 1 cup full-fat sour cream
- 2 tablespoons unsalted butter, melted
- 2 green onions, chopped
- 1 teaspoon paprika (smoked if preferred)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and slice the potatoes into uniform thin rounds.
- In a bowl, mix sour cream, cheddar cheese, melted butter, salt, pepper, and paprika until smooth.
- In a greased baking dish, layer half of the potatoes and spoon half of the creamy mixture over them.
- Repeat with the remaining ingredients.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake uncovered for an additional 20-25 minutes until golden brown.
