Ingredients

  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/2 cup shredded carrots
  • 1 tbsp vanilla extract
  • 1 egg yolk
  • 3 tbsp heavy cream
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 tsp allspice
  • Pinch cloves
  • 1/4 tsp salt
  • 4 oz cream cheese, softened
  • 3 tbsp butter, softened
  • 1 tsp vanilla extract
  • 3/4 cup powdered sugar
  • Chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F and line a baking sheet.
  2. Cream butter and sugars until smooth.
  3. Mix in carrots, vanilla, yolk, and cream.
  4. Add dry ingredients and mix gently.
  5. Divide dough into 8 portions and flatten slightly.
  6. Bake for 12 minutes until edges set.
  7. Cool completely.
  8. Whip frosting ingredients until creamy.
  9. Frost cookies and add pecans.
