Ingredients

- 1/2 cup butter, softened
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 1/2 cup shredded carrots
- 1 tbsp vanilla extract
- 1 egg yolk
- 3 tbsp heavy cream
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/8 tsp allspice
- Pinch cloves
- 1/4 tsp salt
- 4 oz cream cheese, softened
- 3 tbsp butter, softened
- 1 tsp vanilla extract
- 3/4 cup powdered sugar
- Chopped pecans (optional)
Instructions
- Preheat oven to 350°F and line a baking sheet.
- Cream butter and sugars until smooth.
- Mix in carrots, vanilla, yolk, and cream.
- Add dry ingredients and mix gently.
- Divide dough into 8 portions and flatten slightly.
- Bake for 12 minutes until edges set.
- Cool completely.
- Whip frosting ingredients until creamy.
- Frost cookies and add pecans.
