Description

Delicious grilled chicken souvlaki served with fresh veggies and tzatziki sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 3 garlic cloves, minced
  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup tzatziki sauce (store-bought or homemade)

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper. Add cubed chicken breasts and coat thoroughly. Let marinate in the refrigerator for at least 30 minutes.
  2. Prepare Veggies & Skewers: While the chicken marinates, chop bell peppers and cucumbers into bite-sized pieces. Soak wooden skewers in water if using.
  3. Grill the Chicken: Preheat your grill over medium-high heat. Thread marinated chicken and bell pepper onto skewers. Grill for 10-12 minutes until cooked through and slightly charred.
  4. Make Tzatziki Sauce: In a small bowl, mix yogurt with grated cucumber (squeeze out excess moisture), minced garlic, chopped dill, lemon juice, and salt to taste.
  5. Assemble Bowls: Layer cooked rice or quinoa in serving bowls. Top with grilled souvlaki skewers alongside cucumber and cherry tomatoes. Drizzle generously with tzatziki sauce.
