Delicious stuffed bell peppers filled with ground turkey and brown rice.
Ingredients

- 4 medium bell peppers (red, yellow, or green)
- 1 lb lean ground turkey
- 1 cup cooked brown rice
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Slice the tops off the bell peppers and remove seeds; trim bottoms if necessary for stability.
- In a skillet over medium heat, sauté onion and garlic until fragrant (about 3 minutes).
- Add ground turkey; cook until browned, breaking it up as it cooks.
- Stir in cooked rice and Italian seasoning; season with salt and pepper.
- Generously fill each pepper with the turkey mixture and place upright in the baking dish.
- Cover with foil; bake for 25-30 minutes until peppers are tender. Remove foil for the last five minutes to slightly brown tops.
Notes
- For added flavor, consider adding shredded cheese on top during the last five minutes of baking.
