- 2 cups all-purpose flour
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 4 large eggs (room temperature)
- 1 cup dried fruits (raisins and currants)
- 1 cup ground almonds
- 2 tsp mixed spices (cinnamon and nutmeg)
- 8 oz marzipan
- To taste icing sugar (for dusting)
Instructions
- Preheat the oven to 325°F (160°C) and grease an 8-inch round cake pan.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Gradually add eggs one at a time, beating well after each addition.
- Sift in flour, ground almonds, and mixed spices; gently fold in dried fruits.
- Pour batter into the prepared pan and bake for about 1 hour or until golden brown.
- Cool the cake before layering with marzipan: roll out marzipan into circles, brushing apricot jam between layers.
Notes
- Make sure the eggs are at room temperature for better texture.
- For added flavor, additional spices such as ginger or cloves could be incorporated.
