Description

Ingredients

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 4 large eggs (room temperature)
  • 1 cup dried fruits (raisins and currants)
  • 1 cup ground almonds
  • 2 tsp mixed spices (cinnamon and nutmeg)
  • 8 oz marzipan
  • To taste icing sugar (for dusting)

Instructions

  1. Preheat the oven to 325°F (160°C) and grease an 8-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Gradually add eggs one at a time, beating well after each addition.
  4. Sift in flour, ground almonds, and mixed spices; gently fold in dried fruits.
  5. Pour batter into the prepared pan and bake for about 1 hour or until golden brown.
  6. Cool the cake before layering with marzipan: roll out marzipan into circles, brushing apricot jam between layers.
