- 1 cup rolled oats
- 3/4 cup shredded carrots
- 1/2 cup almond flour or oat flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup mashed banana or applesauce
- 2 tablespoons maple syrup or honey
- 2 tablespoons nut butter (almond, peanut, or sunflower seed)
- 1/2 teaspoon vanilla extract (optional)
- 1/4 cup raisins, chopped walnuts, or shredded coconut (optional add-ins)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix oats, flour, cinnamon, nutmeg, baking powder, and salt.
- In a separate bowl, whisk together mashed banana, maple syrup, nut butter, and vanilla until smooth.
- Stir wet ingredients into the dry mixture until well combined.
- Fold in shredded carrots and any optional add-ins.
- Scoop dough onto baking sheet and flatten each cookie slightly.
- Bake for 12–15 minutes, or until edges are golden and set.
- Let cookies cool on baking sheet for a few minutes, then transfer to a wire rack.
Notes
- For a sweeter cookie, increase the amount of maple syrup or honey.
- Store in an airtight container for up to a week.
