Ingredients
Scale
- 2 cups fresh organic kale leaves
- 1 medium apple, cored and chopped
- 1 medium cucumber, chopped
- 1-inch piece fresh ginger, peeled
- Juice of 1 large lemon
- 1 cup water
Instructions
- Wash all ingredients thoroughly. Remove tough stems from kale and chop everything into manageable pieces.
- Add kale, apple, cucumber, ginger, lemon juice, and water to a blender.
- Blend on high until smooth (30-60 seconds).
- If desired, strain the mixture through a fine mesh strainer to remove pulp.
- Serve over ice in glasses garnished with lemon slices or mint sprigs.
