Description
A delicious side dish of roasted baby potatoes tossed with garlic and Parmesan cheese.

- 5 pounds baby potatoes
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 5 cups grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 5 teaspoons salt
- 25 teaspoons black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Wash and dry the baby potatoes. Cut any larger ones in half for even cooking.
- In a large bowl, toss the potatoes with olive oil, garlic, salt, pepper, and Italian seasoning until evenly coated.
- Add Parmesan cheese to the bowl and toss again to coat the potatoes thoroughly.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spread the potatoes out in a single layer.
- Roast for 30 to 35 minutes, turning halfway through, until golden brown and crispy.
- Remove from the oven and sprinkle with chopped parsley and optional extra Parmesan. Serve hot.
