Description

A hearty and healthy vegetable soup packed with flavor.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 stalks celery, sliced
  • 3 large carrots, sliced
  • 1/2 head green cabbage, chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Add chopped onion, garlic, and celery. Sauté until fragrant and softened, about 5 minutes.
  2. Stir in the carrots and cabbage, mixing until the cabbage starts to wilt.
  3. Pour in the diced tomatoes and vegetable broth. Stir in Italian seasoning, salt, and pepper.
  4. Bring the soup to a boil, then reduce heat and cover. Let it simmer for 25 to 30 minutes or until all vegetables are tender.
  5. Add lemon juice and red pepper flakes if desired. Taste and adjust seasoning.
  6. Serve hot, garnished with fresh parsley.
