Ingredients

  • 3 ripe bananas (about 1 ½ cups mashed)
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • ½ cup unsalted butter (melted)
  • 1 tsp baking powder
  • ½ cup unsalted butter (for icing)
  • 1 cup brown sugar (for icing)
  • ¼ cup heavy cream (for icing)
  • ½ tsp sea salt (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Combine mashed bananas with granulated sugar, brown sugar, eggs, and melted butter; whisk until well mixed.
  4. In another bowl, whisk together flour and baking powder; gradually add to the wet mixture until just combined.
  5. Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  6. While cooling, prepare the icing by melting butter and brown sugar in a saucepan over medium heat; stir in heavy cream and sea salt. Simmer for two minutes before removing from heat.
  7. Drizzle icing over cooled bars before cutting into squares.

Notes

  • For best results, use very ripe bananas for more flavor.
  • Store leftover bars in an airtight container at room temperature.
