- 3 ripe bananas (about 1 ½ cups mashed)
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- ½ tsp baking soda
- ¼ tsp salt
- 1 large egg (room temperature)
- ⅓ cup unsalted butter (melted)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining with parchment paper.
- In a large bowl, mash the ripe bananas until smooth, leaving some small chunks if desired.
- Mix in the melted butter, sugar, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually fold this into the banana mixture until just combined—avoid overmixing.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
