- 3 ripe bananas, mashed
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup sugar cookie mix (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mash the ripe bananas until smooth.
- In another bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time and mix in the vanilla extract.
- Whisk together flour, baking powder, and salt in a separate bowl; gradually add this to the wet mixture until just combined.
- Fold in the mashed bananas and optional sugar cookie mix.
- Pour the batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
- Allow to cool before slicing.
Notes
- For added flavor, you can sprinkle some cinnamon in the batter.
- Store leftovers in an airtight container at room temperature.
