A delicious layered dish with ground beef, zucchini, and cheese.

- 1 lb ground beef
- 2 medium zucchini, thinly sliced
- 1/2 medium onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups crushed tomatoes or low-sugar marinara sauce
- 1 tsp Italian seasoning
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Slice zucchini into thin rounds. Sprinkle with salt and let sit on paper towels for 15 minutes to draw out moisture.
- Heat olive oil in a skillet over medium heat. Sauté onion until soft. Add garlic and cook for 30 seconds.
- Add ground beef and cook until browned. Drain excess fat. Stir in marinara, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Spread half of the meat sauce in the bottom of the dish. Layer with zucchini, then mozzarella and Parmesan. Repeat layers.
- Bake uncovered for 25–30 minutes or until cheese is golden and bubbly.
- Let rest for 10 minutes before slicing and serving.
Notes
- This dish is a great way to include more vegetables in your meal.
- Allowing the zucchini to rest with salt helps remove excess moisture, preventing the dish from becoming watery.
