A hearty and easy beef and rice skillet dish that combines ground beef, rice, and broth for a comforting meal.

- 1 lb ground beef
- 1 cup white rice (uncooked)
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 1/4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped parsley (optional, for garnish)
Instructions
- Heat a large skillet over medium heat and add olive oil. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add diced onion and minced garlic to the skillet. Cook until softened and fragrant, about 2 to 3 minutes.
- Stir in tomato paste, paprika, salt, and black pepper. Mix well to coat everything evenly and cook for 1 minute.
- Add uncooked rice and pour in beef broth. Stir to combine all ingredients. Bring to a simmer, then cover with a lid.
- Reduce heat to low and simmer for 18 to 20 minutes, or until rice is tender and liquid is absorbed. Stir occasionally and add a splash of broth if needed.
- Once done, fluff rice with a fork. Garnish with chopped parsley and serve warm.
Notes
- This dish can be customized by adding vegetables like peas or bell peppers for extra nutrition.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
