Description
These delicious pepperoni pizza muffins are perfect for a quick snack or lunch, combining all the classic flavors of pizza in a portable muffin form.
Ingredients
Scale
- 1 ¾ cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon Italian seasoning
- 1 cup milk
- 1 large egg
- 1 cup shredded mozzarella cheese
- ½ cup pepperoni slices
- ½ cup marinara or pizza sauce
Instructions
- Set your oven to 375°F (190°C). Lightly grease or line your muffin tin cups to ensure easy removal after baking.
- In a large bowl, combine flour, baking powder, and Italian seasoning. Whisk them together to evenly distribute the leavening and herbs.
- In a separate bowl, whisk milk and egg together until smooth, then pour into the dry mixture. Stir gently until just combined—avoid overmixing to maintain a soft texture.
- Gently fold in the mozzarella cheese, pepperoni slices, and a few spoonfuls of pizza sauce, so the flavors get evenly spread throughout the batter.
- Divide the batter equally into each muffin cup, filling about three-quarters full. Bake for 15-18 minutes until the tops are golden and a toothpick inserted comes out clean.
- Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack. Enjoy warm or at room temperature.
