Description

This delicious chocolate toffee bark is an easy and festive treat made with saltine crackers, chocolate, and peppermint.


Ingredients

  • 40 saltine crackers
  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup crushed peppermint candies or candy canes
  • 1/4 cup red and green holiday sprinkles

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper, letting it hang over the sides for easy lifting later.
  2. Arrange the saltine crackers in a single layer on the prepared baking sheet, breaking a few if needed to cover the entire surface.
  3. In a medium saucepan, melt the unsalted butter over medium heat. Stir in the packed brown sugar and continue stirring as the mixture comes to a steady boil.
  4. Once boiling, cook the butter and sugar mixture for 3 minutes, stirring frequently, until it thickens, looks glossy, and darkens slightly in color.
  5. Remove the saucepan from the heat and quickly stir in the vanilla extract and fine sea salt.
  6. Carefully pour the hot toffee mixture over the saltine crackers, using a spatula to spread it evenly from edge to edge so all the crackers are coated.
  7. Bake the pan in the preheated oven for 5–6 minutes, or until the toffee is bubbling all over and just starting to darken around the edges.
  8. Remove the pan from the oven and immediately sprinkle the semi-sweet chocolate chips evenly over the hot toffee layer.
  9. Let the chocolate chips sit for 2–3 minutes to soften, then use an offset spatula or the back of a spoon to spread the melted chocolate into a smooth, even layer.
  10. While the chocolate is still soft, sprinkle the crushed peppermint candies and holiday sprinkles evenly over the top.
  11. Allow the pan to cool at room temperature until no longer hot, then transfer it to the refrigerator to chill for at least 1–2 hours, or until the chocolate is fully set and the toffee is firm.
  12. Once chilled, lift the entire slab out of the pan using the parchment paper and break it into rustic pieces with your hands. Serve immediately or store in an airtight container until ready to enjoy.
