A quick and delicious recipe for Easy Bourbon Chicken that is perfect for weeknights.


Ingredients

  • 1 pound boneless, skinless chicken breasts (chopped into 1-inch pieces)
  • 1/4 cup cornstarch (for coating)
  • to taste salt

  • 2 tablespoons vegetable oil (or sesame oil)
  • 2 cloves fresh garlic (minced)
  • 1 cup low-sodium chicken broth
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup apple juice
  • 1/4 cup ketchup
  • 1/4 cup bourbon (optional)
  • 2 tablespoons apple cider vinegar
  • 1/4 cup brown sugar (or half honey)
  • 1 teaspoon ground ginger
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes (to taste)

Instructions

  1. In a mixing bowl, stir together cornstarch, salt, and pepper. Toss the chicken pieces until they’re well-coated.
  2. In a large skillet, heat vegetable oil (or sesame oil) over medium-high heat. Carefully add the chicken pieces, cooking them for about 3 minutes on each side until they are golden brown and crispy.
  3. Remove the browned chicken from the skillet and set aside. In the same pan, sauté the minced garlic for about 30 seconds until fragrant.
  4. Add chicken broth, soy sauce, apple juice, ketchup, optional bourbon, apple cider vinegar, brown sugar, ground ginger, onion powder, and crushed red pepper flakes into the skillet. Stir and bring to a gentle boil.
  5. Lower the heat, add the browned chicken back into the skillet, and let it simmer for about 10 minutes.
  6. For an even thicker sauce, mix an additional tablespoon of cornstarch with cold water before adding it into the sauce. Stir and simmer for another 2 minutes.
  7. Serve your warm Easy Bourbon Chicken over rice or alongside steamed vegetables.
