Ingredients

- 1 lb boneless, skinless chicken breasts (about 3–4 pieces)
- 1 cup roasted unsalted cashews
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 3 cloves garlic, minced
- 1 inch ginger, minced
- ¼ cup low-sodium soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
Instructions
- Chop the chicken into bite-sized pieces and slice the vegetables.
- In a bowl, marinate chicken with soy sauce, honey, garlic, and ginger for at least 15 minutes.
- Heat sesame oil in a skillet over medium-high heat and sauté the vegetables until tender-crisp.
- Add the marinated chicken to the skillet and cook until golden brown and fully cooked (about 5-7 minutes).
- Stir in the cashews just before serving.
- Serve over steamed rice or noodles and garnish with green onions or sesame seeds.

- For added flavor, consider adding chili flakes for spice.
