Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or milk with 1/2 tablespoon lemon juice)
  • 2 cups apples, peeled, cored, and diced (about 2 medium apples)
  • 1 cup pitted dates, chopped
  • 1/2 cup walnuts or pecans, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined.
  6. Gently fold in the diced apples, chopped dates, and nuts (if using) until evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. In a small saucepan over medium heat, combine the brown sugar, butter, heavy cream, vanilla extract, and a pinch of salt. Stir until the mixture comes to a gentle boil. Let it boil for 2-3 minutes, stirring constantly, until it thickens slightly. Remove from heat and let it cool for a few minutes.
  9. Once the cake has cooled, drizzle the toffee glaze over the top, allowing it to drip down the sides.
  10. Slice the cake and serve it warm or at room temperature.
