- 2 medium sweet potatoes (about 1 cup mashed)
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ cup brown sugar
- 2 large eggs
- ½ cup milk (or plant-based alternative)
- ⅓ cup melted butter (or coconut oil)
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and cube sweet potatoes. Boil until tender, then mash until smooth.
- In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and brown sugar.
- In another bowl, mix melted butter, eggs, milk, and mashed sweet potatoes until smooth.
- Combine wet and dry ingredients gently; avoid overmixing.
- Spoon batter into greased muffin cups.
- Bake for 20–25 minutes until golden brown.
- Cool slightly before enjoying.
