- 2 pounds chicken thighs
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup onion, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 3 tablespoons butter
- 3 tablespoons flour (for thickening)
- 1 cup flour (for dumplings)
- 2 teaspoons baking powder
- 5 teaspoons salt
- 3/4 cup milk
- 5 teaspoons pepper
- 1 teaspoon fresh thyme (optional)
Instructions
- Melt butter in a large pot over medium heat. Add chopped onions, carrots, and celery. Cook for 5-7 minutes until vegetables are softened. Add minced garlic and cook for another minute.
- Add chicken thighs and pour in the chicken broth. Bring to a boil, then reduce to a simmer. Cook for 25-30 minutes until chicken is tender.
- Remove chicken and shred using two forks. Return shredded chicken to the pot.
- In a bowl, mix 3 tablespoons of flour with a splash of water to make a slurry. Stir into the pot to thicken the broth. Simmer for 5-10 minutes.
- In another bowl, mix 1 cup flour, baking powder, salt, and milk to form dumpling dough.
- Drop spoonfuls of dumpling dough into the simmering broth.
- Cover and simmer for 15 minutes. Do not lift the lid to ensure fluffy dumplings.
- Season with additional salt, pepper, and thyme if desired. Serve hot.
Notes
- For best results, do not lift the lid while the dumplings are cooking.
- This dish can be stored in the refrigerator for up to 3 days.
