Description

A delicious beef pho recipe made with a rich broth and fresh ingredients.


Ingredients

  • 2 lbs beef marrow or knuckle bones
  • 1 lb beef brisket (optional)
  • 1 large onion, halved
  • 3-inch piece of ginger, halved lengthwise
  • 2 star anise
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 tsp coriander seeds
  • 1 black cardamom pod (optional)
  • 2 tbsp fish sauce
  • 1 tbsp rock sugar or brown sugar
  • 8 cups water
  • 14 oz rice noodles (banh pho)
  • 1/2 lb thinly sliced eye of round or sirloin
  • 1 cup fresh cilantro leaves
  • 1 cup Thai basil leaves
  • 1/2 cup fresh mint leaves
  • 2 cups bean sprouts
  • 2 limes, cut into wedges
  • 2 jalapeños, sliced
  • Hoisin sauce, for serving
  • Sriracha sauce, for serving

Instructions

  1. Parboil beef bones in boiling water for 10 minutes, then drain and rinse.
  2. Char onion and ginger under broiler or over open flame until blackened.
  3. Add bones, charred onion and ginger, spices, and water to a large pot. Simmer for 6–8 hours.
  4. Skim impurities, then strain the broth. Season with fish sauce and sugar.
  5. Cook rice noodles per package instructions. Prepare garnishes.
  6. In serving bowls, add noodles and raw beef slices. Ladle over hot broth to cook the beef.
  7. Garnish with herbs, sprouts, lime, and sauces to your liking.
