Description

A delicious flatbread pizza made with a creamy cottage cheese base, topped with savory sauce, cheese, and pepperoni.


Ingredients

  • 1 cup cottage cheese (full-fat recommended)
  • 2 eggs (large)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 pinch black pepper
  • 1 teaspoon Italian herb mix (oregano, basil, thyme blend)
  • 2/3 cup pizza sauce
  • 3 ounces grated cheese (Gouda, Edam, or mozzarella)
  • 2 ounces pepperoni slices

Instructions

  1. In a blender, combine the cottage cheese, eggs, garlic powder, salt, black pepper, and Italian herb mix. Blend for 30-45 seconds until the mixture is completely smooth with no lumps remaining.
  2. Preheat your oven to 350°F (180°C).
  3. Line a baking sheet with parchment paper and pour the blended mixture onto it. Spread the mixture into a thin, even circle about 10-12 inches in diameter.
  4. Place the baking sheet in the preheated oven and bake for 30 minutes until the flatbread is set and lightly golden.
  5. Remove the flatbread from the oven and increase the oven temperature to 400°F (200°C).
  6. Spread the pizza sauce evenly over the baked flatbread, leaving a small border around the edges.
  7. Sprinkle the grated cheese evenly over the sauce, then distribute the pepperoni slices across the top.
  8. Return the flatbread with toppings to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly with golden-brown spots.
  9. Remove from oven and let rest for 2-3 minutes before slicing and serving.
