- 1/4 cup fresh lemon juice (about 2 lemons)

- 1/4 cup extra virgin olive oil
- 2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the Yukon Gold potatoes, then cut them into wedges.
- In a bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper.
- Toss the potato wedges in the mixture until evenly coated.
- Spread the potatoes on a parchment-lined baking sheet in a single layer.
- Roast for about 45 minutes or until golden brown and crispy.
- Serve warm, garnished with fresh parsley if desired.
