Description
A delicious grilled chicken sandwich layered with fresh mozzarella, tomatoes, and pesto.
Ingredients

- 2 large Chicken Breasts
- ¼ Cup Olive Oil
- 1 Clove Garlic
- 1 Pesto
- Fresh, sliced Mozzarella Cheese
- Fresh Roma, sliced Tomatoes
- to taste Balsamic Glaze
- 4–5 Rolls (Ciabatta or Kaiser rolls, toasted)
Instructions
- Make the marinated grilled chicken.
- Slice the bread in half and brush each side with olive oil. Pan fry the bread in a cast iron skillet (or grill) over medium heat.
- Rub each side of the bread with half of a garlic clove.
- Lather one half of the bread with pesto.
- Layer the chicken, mozzarella, and tomatoes and drizzle with a little balsamic glaze.
- Top with the other half of the bun. Enjoy!
Notes
- Make sure to toast the rolls for extra crunch.
- Chicken can be marinated in advance for better flavor.
