Grilled Chicken Sandwich

Description

A delicious grilled chicken sandwich layered with fresh mozzarella, tomatoes, and pesto.


Ingredients

Scale
  • 2 large Chicken Breasts
  • ¼ Cup Olive Oil
  • 1 Clove Garlic
  • 1 Pesto
  • Fresh, sliced Mozzarella Cheese
  • Fresh Roma, sliced Tomatoes
  • to taste Balsamic Glaze
  • 45 Rolls (Ciabatta or Kaiser rolls, toasted)

Instructions

  1. Make the marinated grilled chicken.
  2. Slice the bread in half and brush each side with olive oil. Pan fry the bread in a cast iron skillet (or grill) over medium heat.
  3. Rub each side of the bread with half of a garlic clove.
  4. Lather one half of the bread with pesto.
  5. Layer the chicken, mozzarella, and tomatoes and drizzle with a little balsamic glaze.
  6. Top with the other half of the bun. Enjoy!

Notes

  • Make sure to toast the rolls for extra crunch.
  • Chicken can be marinated in advance for better flavor.
