Description

This creamy Tuscan gnocchi dish is a delightful combination of flavors and textures, featuring potato gnocchi, sun-dried tomatoes, spinach, and a rich Parmesan cream sauce.


Ingredients

  • 1 pound (500g) potato gnocchi (store-bought or homemade)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes (oil-packed), sliced
  • 2 cups baby spinach, roughly chopped
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh basil (plus more for garnish)

Instructions

  1. Bring a large pot of salted water to a gentle boil. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes. Gnocchi will float to the surface when done. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add sliced sun-dried tomatoes to the skillet and cook for 2 minutes, stirring regularly. Stir in chopped spinach and cook until just wilted, about 1 minute.
  4. Pour in the heavy cream and milk, stirring to combine. Allow the mixture to simmer gently for 3 minutes until slightly thickened.
  5. Stir in the grated Parmesan, red pepper flakes (if using), salt, and black pepper. Continue to cook, stirring often, until the cheese has melted into a rich, smooth sauce (about 2 minutes).
  6. Add drained gnocchi to the skillet and gently toss until every piece is well-coated in the creamy Tuscan sauce. Stir in chopped fresh basil and cook another minute to let the flavors meld.
  7. Serve immediately, garnished with extra Parmesan and fresh basil if desired. Enjoy while warm!
