- 1 pound (500g) potato gnocchi (store-bought or homemade)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes (oil-packed), sliced
- 2 cups baby spinach, roughly chopped
- 1 cup heavy cream
- 1/2 cup whole milk
- 3/4 cup freshly grated Parmesan cheese
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon chopped fresh basil (plus more for garnish)
Instructions
- Bring a large pot of salted water to a gentle boil. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes. Gnocchi will float to the surface when done. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add sliced sun-dried tomatoes to the skillet and cook for 2 minutes, stirring regularly. Stir in chopped spinach and cook until just wilted, about 1 minute.
- Pour in the heavy cream and milk, stirring to combine. Allow the mixture to simmer gently for 3 minutes until slightly thickened.
- Stir in the grated Parmesan, red pepper flakes (if using), salt, and black pepper. Continue to cook, stirring often, until the cheese has melted into a rich, smooth sauce (about 2 minutes).
- Add drained gnocchi to the skillet and gently toss until every piece is well-coated in the creamy Tuscan sauce. Stir in chopped fresh basil and cook another minute to let the flavors meld.
- Serve immediately, garnished with extra Parmesan and fresh basil if desired. Enjoy while warm!

- For a lighter version, you can use half-and-half instead of heavy cream.
