- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 8 ounces cremini or white mushrooms, sliced
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 2 cups low-sodium chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 cup sour cream
- 8 ounces egg noodles, cooked and drained
- Chopped fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it apart with a spoon. Cook until browned and no longer pink, about 5 minutes. Transfer cooked turkey to a plate and set aside.
- In the same skillet, add the diced onion and sliced mushrooms. Sauté for 5-6 minutes, stirring occasionally, until the vegetables are softened and the mushrooms are golden. Stir in the minced garlic and cook for 1 additional minute.
- Sprinkle the paprika, dried thyme, salt, and black pepper over the vegetables. Stir well, then sprinkle in the flour and cook for 1 minute, stirring constantly to coat the vegetables.
- Slowly pour in the chicken broth while whisking to prevent lumps. Add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook for 3-4 minutes until the sauce has thickened.
- Return the cooked ground turkey to the skillet. Reduce heat to low and stir in the sour cream until the mixture is smooth and creamy. Cook for 1-2 minutes more, just to heat through—do not boil.
- Serve the stroganoff over cooked egg noodles. Garnish with chopped fresh parsley and enjoy!
