Description

This comforting Turkey Stroganoff is a delicious twist on a classic dish, featuring tender ground turkey in a creamy sauce served over egg noodles.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 8 ounces cremini or white mushrooms, sliced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 cup sour cream
  • 8 ounces egg noodles, cooked and drained
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it apart with a spoon. Cook until browned and no longer pink, about 5 minutes. Transfer cooked turkey to a plate and set aside.
  2. In the same skillet, add the diced onion and sliced mushrooms. Sauté for 5-6 minutes, stirring occasionally, until the vegetables are softened and the mushrooms are golden. Stir in the minced garlic and cook for 1 additional minute.
  3. Sprinkle the paprika, dried thyme, salt, and black pepper over the vegetables. Stir well, then sprinkle in the flour and cook for 1 minute, stirring constantly to coat the vegetables.
  4. Slowly pour in the chicken broth while whisking to prevent lumps. Add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook for 3-4 minutes until the sauce has thickened.
  5. Return the cooked ground turkey to the skillet. Reduce heat to low and stir in the sour cream until the mixture is smooth and creamy. Cook for 1-2 minutes more, just to heat through—do not boil.
  6. Serve the stroganoff over cooked egg noodles. Garnish with chopped fresh parsley and enjoy!
