Description

A refreshing coconut and pineapple drink that is perfect for hot days.


Ingredients

Scale
  • 2 1/2 cups coconut water or substitute filtered water or decaf green tea
  • 1 1/2 cups diced pineapple, fresh or frozen, thawed
  • 1/2 lime, juiced
  • 23 tablespoons unsweetened coconut milk or half and half
  • 1/2 teaspoon salt (Celtic Sea Salt recommended)
  • 12 tablespoons honey or maple syrup, or preferred sugar-free sweetener

Instructions

  1. Add the coconut water, diced pineapple, lime juice, coconut milk, salt, and your chosen sweetener to a high-speed blender. Blend on high speed for around 30 seconds, or until the mixture is completely smooth. If you like an extra chilled drink, pop some ice cubes into the blender as well.
  2. Fill your serving glass with ice. Pour the blended pineapple-coconut mixture through a fine mesh strainer directly over the ice, allowing the liquid to filter in and leaving any pulp behind for a smoother texture.
  3. For a festive presentation, add a splash of vibrant fruit juice (like pomegranate) into the base before pouring in the main liquid—this creates lovely color layers.
  4. Top with a handful of fresh or frozen pomegranate arils and a juicy orange wedge for garnish. Enjoy your tropical creation chilled!
