Description
A comforting and delicious tater tot casserole made with ground beef, vegetables, and cheddar cheese.

- 1 1/2 lb ground beef (or ground turkey)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 2 tbsp tomato paste
- 1 1/2 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and black pepper, to taste
- 2 1/2 cups shredded cheddar cheese, divided
- 1 (28 oz) bag frozen tater tots
- 2 tbsp olive oil
- Cooking spray
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Lightly coat a 9×13-inch baking dish with cooking spray.
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking up with a spoon, until browned and no longer pink, about 5-7 minutes. Drain excess fat if needed.
- Add diced onion and minced garlic to the skillet. Cook for 2-3 minutes, stirring, until softened and fragrant.
- Stir in frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, thyme, rosemary, salt, and black pepper. Simmer for 5-7 minutes, until thickened slightly and vegetables are warmed through.
- Spread the beef and vegetable mixture evenly in the prepared baking dish. Sprinkle 1 cup of shredded cheddar cheese over the top.
- Arrange frozen tater tots in a single, even layer on top of the cheese.
- Sprinkle the remaining 1 1/2 cups cheddar cheese over the tater tots.
- Bake uncovered for 30-35 minutes, or until the tater tots are golden and crispy and the cheese is bubbling.
- Let cool for 5 minutes, then sprinkle with fresh chopped parsley if desired. Serve hot and enjoy!
Notes
- This dish can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
- For a spicier version, add some diced jalapeños or hot sauce.
